There is no better dinner on a cold winter evening than a cup of hot soup. It warms your heart and soul, and is one of the original comfort foods. One of my favorites is broccoli cheese. My aunt, who is a wonderful cook, gave me this recipe quite a long time ago, and I make it often.
Cheese Broccoli Soup
1 quart water
1 tablespoon salt
1/4 teaspoon pepper
1/2 teaspoon garlic powder
2 pounds Velveeta cheese, broken in pieces
1 1/2 quarts half & half
1 1/2 pounds chopped broccoli, cooked and drained
1/3 cup cornstarch
In a 3 quart double boiler, combine water, salt, pepper, garlic powder, cheese pieces, and 1 quart half & half. Cover and cook until cheese is melted. Stir in cooked and drained broccoli. Using wire whip, mix cornstarch with remaining half & half. Stir into broccoli and cheese mixture and cook until soup thickens. Remove from heat.
