Chicken Casserole

Try this recipe and delight your family with a warm, rich, delicious dish. This is a time saver and a family pleaser. This is a rich recipe, so a little goes a long way.

Ranch Chicken Casserole

1 lg. chicken breast cooked, de-boned & diced into pieces

1 bell pepper chopped

1 medium onion chopped

1 can of cream of mushroom soup

1 can of cream of chicken soup

1 cup of chicken stock

1 lb. sharp shredded Cheddar cheese

1 can of Rotel tomatoes or 2 medium fresh tomatoes diced (this goes on last for color)

1 pkg. corn tortillas cut in pieces

Pre-cook onion and bell pepper in a little butter in a frying pan until tender, before adding to the mix. Mix ingredients thoroughly together in a large bowl, omitting the tortillas they will be placed on the bottom of the baking dish, cheese and tomatoes will be placed on top of the casserole.

Preheat oven to 350 degrees. Grease a large casserole dish and place the tortillas on the bottom and stand them up on all sides of the dish. Pour mixture over the tortillas spreading evenly. Sprinkle cheese evenly over entire casserole and spread diced tomatoes on top. If you like hot and spicy dishes, you can also add a diced jalapeno on top of the tomatoes to give it an extra zing. Bake until bubbly and the tortillas are golden brown.
