Sweet potato pie is of course a holiday favorite in many homes and luckily this delightful pie is quick and easy to bake.

CRUST

2 cups of all purpose flour
1/2 cup of unsalted butter (chilled and cubed)
5 tablespoons of ice water
3 tablespoons of vegetable shortening
1 egg yolk
1/2 teaspoon salt

Combine flour and salt in a blender and add butter and shortening and process until the mixture resembles coarse bread crumbs. With the motor running add egg yolk, lemon juice and enough water for the mixture to form soft dough. Divide the dough into 2 pieces and flatten into 2 thick disks one bigger than the other. Wrap the disks in plastic wrap and refrigerate for a couple of hours.

FILLING

2 cups of sweet potatoes (boiled and mashed)
2 eggs separated
1 cup of packed brown sugar
1/4 pound butter or margarine (softened)
1/2 cup of evaporated milk
1/4 cup of sugar
1 teaspoon of ground cinnamon
1/2 teaspoon of ground nutmeg
1/2 teaspoon of ground ginger
1/4 teaspoon of salt

Preheat to 400 degrees .

Combine sweet potatoes, brown sugar, egg yolks, butter, evaporated milk, salt and spices in a mixing bowl and mix thoroughly.

Beat the egg whites well and add the white sugar. Fold the egg white mixture into the sweet potato mixture.

Pour the prepared mixture into the unbaked pie shell and bake for 10 minutes at 400 degrees. Reduce the temperature to 350 degrees and bake for another 30 minutes.
