Chocolate bit pancakes,

1 to1 cups milk , I like half and half. Can milk is a ok substitute. If using soy milk use unflavored or original.
2 eggs
1 cups flour
1 tablespoon baking power
3 tablespoons baking cocoa powder
2 tablespoons oil
1 cup sugar
1 tablespoon vanilla extract, more if you want.
One Yoplait French vanilla yogurt (for extra tastiness)

Start by mixing cocoa and oil in a small bowl. Do not skip the mixing in a small bowl, I know it is one more dish to wash but it’s a important step. If you mix all together your pancakes will be brown in color and not the same or as good as the little chunks are.
If you have a food processor or Magic Bullet, put the sugar through a few pulses. You want to be almost powered sugar. If you don’t have anything to to that with it is ok to use regular sugar. Do not use powder sugar it will not be the same.
Add the vanilla to cocoa and oil mixture then
Add sugar in portions. You are looking for a clumpy texture, mixed but clumpy. Break up clumps leaving some pea size ones. Taste to see if it is sweet enough for your liking.
Set aside cocoa mix. Combine flour, baking powder in medium bowl. You just want to get the baking powder thought out the flour. Add eggs, yogurt, milk and any left over sugar to flour mixture. Mix a little then add cocoa mix. Mix until you like the consistency, adding a little more milk or flour is ok if you think it is necessary

Heat skillet or what ever you are cooking them. I set the skillet at 350 on a range that’s med/high. I use non-stick cooking spray instead of putting oil in the skillet. Use a soup ladle to spoon the pancake mix in to skillet; it makes the perfect size pancakes. Cook as if you would any other pancakes, flip when bubbles appear on top of pancake. 2-4 minutes on the other side and you’re done.
The hardest part is not eating them all when you are making them. These pancakes are great with butter and syrup or with nothing at all. MMMMM I love topping them with chopped nuts like cashews or macadamia nuts

I like that it is up to you the person making it, how sweet you want it. Another version is to use chopped chocolate cover macadamia nuts in place of the cocoa mixture. If you want to use a baking mix like Jiffy or something that is fine just use the same amount as you would as if it was flour, and you don’t need to put baking powder. Only if you want extra fluffy pancakes. You have to use the cocoa powder not the squares. Lastly, try not to use more then a cup or sugar or they will get to sweet.
