Green Bean Casserole

The flavours of olive oil, garlic and tomatoes really give this delicious green bean casserole a taste of the Mediterranean whatever the season.

Simple to make, it is even simpler to serve. It is perfect as a nutritious and tasty main meal for vegetarians and meat eaters alike. It also makes a wonderful accompanying dish to any other main course.  

Ingredients:

1 lb fresh French beans, top and tailed

1 tablespoon olive oil

800g ripe chopped tomatoes, peeled and deseeded

2 cloves crushed garlic

Fresh oregano

Method.

Pre heat the oven to Gas mark 4/180 degrees centigrade.

Top and tail the beans and wash thoroughly. Set aside.

In an oven proof casserole, lightly fry the garlic for a minute or so until soft but not golden. Turn off the heat and add the beans, gently tossing in the garlicky oil.

Now add the tomatoes and herbs and mix thoroughly to ensure all the flavours combine.   Take the casserole and cover cook in the preheated oven for thirty minutes before serving.

Serving suggestions.

The beauty of this dish is its versatility. It can be served in so many different ways. Why not try one of the following?

*Serve hot with brown or white rice as a tasty main course for dinner

* enjoy as a warm, light lunch with some crusty bread

*Turn into a pasta sauce. Cut the beans into smaller pieces before cooking. Cook as instructed, and then toss in freshly cooked pasta. Serve hot.

*serve with grilled fish, chicken or steak as a lively vegetable accompaniment to give your meal a real taste of the Mediterranean

              *Allow to cool and serve as a stand alone salad-perfect for a packed or picnic lunch

* Add an extra dimension by adding some colourful ribbons of bell pepper just before cooking in the oven
