Who says that quick and easy can’t be elegant and fantastic? By using some unique ingredients and this unusual salad dressing, this is a wonderful salad that is worthy of any special occasion. Try and make an effort to find Asian pear, they are really delicious, but your favorite pear may do in a pinch.
Asian pear and mixed Green Salad with Burnt Sugar Dressing

Ingredients: 1 large Asian pear, 1 thinly sliced white onion, your favorite mixed greens (enough to fill a large salad bowl), a half-cup of pecans, and blue cheese for garnish

Preparation: Before starting your salad, toast your pecans in a dry skillet (no oil) till you begin to smell the toasted nut aroma. Just turn off the heat at that point and let them cool. Wash your greens and put them in your serving bowl. Thinly slice your onion and add to the greens. Cut the Asian pear from stem to base and scoop out seeds and pith with a teaspoon. Slice thinly and add to bowl. At this point, toss salad, then garnish with crumbles of Bleu cheese and toasted pecans.

Burnt Sugar Dressing

I was first served Burnt Sugar Dressing in one of the finer restaurants in New Orleans. This is my own attempt to re-create it at home. The sweet burnt flavor of the molasses is wonderful with the Asian pear, pecans and Bleu cheese.
In a bowl add a heaping tablespoon of molasses, three tablespoons of apple cider vinegar, one teaspoon of Dijon mustard, and a pinch of fresh ground salt and black pepper. Slowly whisk in about a half-cup of olive oil to emulsify. Check for balance of flavor and seasoning. Lightly drizzle on salad and serve, but you already knew that!
