Recipes Sweet Potato Mashed Potatoes

Mashed sweet potatoes are a holiday favorite in my house. Of course, for the more health conscious person they are a great substitute for the white or red potato. Sweet potatoes are loaded with extra nutrients and in the world of weight loss they are considered a “super” food.

They are fairly easy to prepare and you can easily spice up bland mashed sweet potatoes with a few simple ingredients.

MASHED SWEET POTATOES

Ingredients

4 large sweet potatoes (peeled, cleaned, sliced)
1/4 cup of brown sugar
1/2 cup of half and half
1/4 cup of margarine
2 tablespoon of cinnamon

PREPARATION

Boil the sliced sweet potatoes until they are tender about 20 minutes. Drain the water off, using a beater on medium high speed whip the potatoes with the margarine, half and half and brown sugar. Place in serving dish and sprinkle cinnamon on top.

BAKED SWEET MASHED POTATOES

Ingredients

4 large sweet potatoes (peeled, cleaned, sliced)
1/4 cup of brown sugar
3/4 cup of half and half
1/2 cup of margarine
2 tablespoon of cinnamon
1/4 cup of white marshmallow fluff

PREPARATION

Boil the sliced sweet potatoes for 10 minutes (they will still be hard), drain the water and place the sweet potatoes in a baking dish with the margarine, half and half, brown sugar and marshmallow fluff. Preheat oven to 350 and bake for 30 minutes. Sprinkle the cinnamon on top and serve. Serves 6

To add a little holiday flare to your mashed sweet potatoes place a few plops of marshmallow fluff on top and place red and green maraschino cherries in the center of the fluff.
