This recipe for English toffee is a tasty treat when you crave a sweet crunch! It also makes a wonderful holiday gift wrapped in red or green cellophane and tied up with a pretty ribbon!
1 cup butter
1 1/3 cups sugar
1 Tbsp. light corn syrup
2 Tbsp. water
1/2 cup semisweet chocolate chips
1/3 cup chopped nuts
1 tsp. vanilla
Combine butter, sugar, corn syrup and water in deep 2 quart bowl. Microwave uncovered for 4 minutes. Stir. Microwave uncovered 6 to 8 minutes, until about 300 degrees F. is reached, stirring and checking temperature during the last few minutes. Stir in vanilla. Pour into ungreased 13×9 inch pan. Sprinkle with chocolate chips. Let stand until chips are softened. Spread evenly over toffee. Sprinkle with nuts,pressing them gently into chocolate. Refrigerate to set chocolate. When cool, turn out of pan and break into pieces. Enjoy!
