I can admit it. I have a real weakness for chips and salsa. For me the combination of crispy, salted chips and the vibrant taste of a good salsa, grabs me every time. One of my favorite salsas without a doubt is black bean and corn. Not only is it flavorful but extremely easy to make. Black Bean and Corn salsa also makes a wonderful accompaniment to chicken or fresh fish and it can add a new layer of depth to almost any meal. For us purists there’s still nothing better than a big bowl of chips, delicious, homemade salsa and your favorite movie. Enjoy.
BLACK BEAN AND CORN SALSA
2 cans black beans, rinsed
1 bag frozen white corn, thawed and rinsed
1 large red bell pepper, finely chopped
1/2 red onion, finely chopped
1 bunch cilantro, finely chopped
Juice of 1 1/2 limes
3 Tablespoons each olive oil and balsamic vinegar
3/4 teaspoon cumin
1/2 teaspoon seasoning salt
Mix all ingredients in a large bowl and chill for at least one half hour.
