Beef Stew became a challenge between my husband and I to see who could make a tasty beef stew. He had a secret ingredient that he would not tell me. Would you believe it was V-8 juice? I never would have thought of putting V-8 juice in but it does make sense now that I think about it.
My beef stew was good but he did not like the thick gravy in it. I thought gravy was what made a stew yummy. But you know what I love his secret ingredient of V-8 juice which makes it healthy and Idefinitely had another bowl.
He makes the beef stew in a 4-6 quart cast iron pot which helps mix the flavors as it simmers. He is very meticulous and adds each ingredient one by one. I just toss them all in.
So here is my husbands Easy Beef Stew recipe.
EASY BEEF STEW
Place 2 cups of diced beef stew and 2 medium chopped onions in a 4-6 quart cast iron pot
Cook until browned. (He uses no oil – the fat on the beef is enough, he says)
Add each vegetable as it is chopped (not all at once as I would)
2 cups of baby carrots (do not chop)
1 red pepper chopped
1 green pepper chopped
1 cup chopped celery
2 cups chopped potatoes (with skin left on)
2 cans of stewed tomatoes
Then cover all vegetables with V-8 juice and 1 inch above if there is room in the pot
Cook on medium heat for 1/2 hour and then simmer on low for 1 hour
Serve in soup bowls with corn chips
Be sure to invite friends to try this tasty beef stew. Serve with a nice tossed salad and hot homemade bread. Then make your own sundae for dessert.
Beef stew can be served any time of the year and can be placed in small freezer containers to have on hand for surprise company, work lunches or just whenever you get hungry for a tasty beef stew. Especially with our busy lifestyles it is nice to have something to grab and put in the microwave to re-heat.
