Great Veggie Soup

Great Veggie Soup

I make this soup often throughout the winter months especially. It is hearty, has some zip and zest to it and it is easy to make, done in a matter of minutes and ready to serve.

Combine in soup pot

3 cups V-8 juice
2 cups (1 #2 can) chicken or beef stock (or vegetable stock if you prefer)
1 cup shredded cabbage
1 tomato diced
1/2 cup diced onion
1/2 cup diced green pepper
1 small package frozen mixed vegetables
1-2 Tbsp. Worcestershire Sauce (depending on how much zip you like)
1 Tbsp. margarine or butter
1 tsp. chopped parsley
2 cloves garlic, crushed
1/2 tsp. paprika
1/2 tsp. salt
1/4 tsp. ground black pepper
1/4 tsp. cayenne pepper

Bring ingredients to full boil. Reduce heat to simmer for 10-12 minutes until vegetables are tender. Serve hot with slices of cornbread and apple jelly and a side salad for a healthy and delicious meal anytime but especially on those cold and blustery winter nights. It is great veggie soup.
