Easy Hearty Italian Chicken Soup with Cheesy Toasted Garlic Bread

You can not go wrong with this recipe. It is a great Italian twist on chicken soup. This is definatley a meal in itself. This is a healthy and low fat, hearty soup that will be sure to please everyone. It is so simple to make and unbelievably satisfying. Try this recipe on one of those blustry winter days. It’s sure to to warm you up. Serve with cheesy garlic Italian bread.

3 large carrots peeled

1 large onion

4 stalks of celery

4 cloves fresh garlic

5 peeled diced potatoes

2 Lbs. boneless /skinless chicken breast diced

1 can kernel corn

3 Table Spoons Olive oil

2 cups of chicken broth

5 beef bullion cubes

1 Table Spoon montreal seasoning

1 Table Spoon oregano

1 Table Spoon basil

Wash carrots, celery, onions and potatoes. Peel carrots, onion, garlic, and potaotes . Chop celery, onions, and carrots. Dice potatoes into bite size pieces. Set a side. Thoroughly wash chicken and cube into bite size pieces. In a 4 quart pot add olive oil with chopped carrots, celery, onions, and garlic. Add 1 table spoon montreal seasoning. Saute till they are tender. Next, add 1 cup of chicken broth, 1 cup of tomato sauce,cubed chicken, beef bullion cubes, oregano, and basil. Cook over medium heat for 10 minutes. Add 1 can of corn. Next you will add diced potatoes and 1 cup chicken broth. Cook over medium heat until potatoes are tender. Cut Italian bread into slices. Sprinkle with paprika, garlic powder, and montreal seasoning. Sprinkle with Parmesan cheese. Bake in a preheated 375 degree oven for 5-8 minutes. Simple, hearty and delicious. bon appetit
