Quick And Easy Salad Recipes

Quick and easy salads are ideal choices for light warm weather suppers. All types of lettuces and greens are in abundance and by adding some tasty ingredients they will provide all the nourishment needed when we don’t want to turn on the stove in the dog days of summer.

Recipes for salads abound, and with some creativity they can be customized into “signature” dishes to be served and complimented at any social event or gathering.

My favorite pasta salad will serve 8 or, if I am called upon to bring a potluck dish, can be doubled to accommodate 15 – 25.

Pasta Surprise:

1 cup each of three kinds of cooked pasta. I use pinwheel, bowtie and rotini.
1 cup of zucchini, sliced and quartered
1 cup cucumber, sliced and halved
1/4 cup chopped red onion
1/4 cup radish, thinly sliced
1/4 cup each, diced of red and yellow pepper
1 cup halved cherry tomatoes
1 cup crumbled feta cheese
1 cup Kraft “House” dressing (or substitute Kraft Zesty Italian)

Toss all ingredients in a large bowl and refrigerate for 1 hour to blend flavors.

Spinach Salad:

One of my favorites is this crisp spinach salad. After washing the fresh spinach leaves, shred them finely in a mixing bowl. Three to four cups will accommodate generous servings for six.

Add the following ingredients:

* One small Bermuda onion – minced
* One fourth cup of diced celery
* Four hard cooked eggs – sliced

Toss everything together with the spinach and chill. Just before serving, toss again with French dressing. A couple of slices of cold ham on the side makes a filling and satisfying meal.

Kidney Bean Salad:

Another of our family favorites that is loaded with protein and oh, so healthy, is the standard kidney bean salad.

Mix the following:

* Two cups of drained, cooked kidney beans
* One fourth cup of diced celery
* Three pickles – chopped (dill or sweet)
* One small onion – minced

Add these ingredients:

* Two hard cooked eggs – sliced
* One half teaspoon of salt
* One eighth teaspoon of pepper
* One fourth cup of sour cream

Chill thoroughly and garnish with grated cheddar cheese

Another option for this popular salad is to substitute chick-peas or garbanzo beans for the kidney beans.

Any one of these quick and easy salads will satisfy the most discriminating appetites. Accompany with iced tea and top off with a desert of sherbet or Jell-o in order to provide a meal you will be proud to serve to your family or guests.
