Guilt-Free Chocolate Cookies
(No cholesterol; No white flour; No sugar; No trans fats; Dark Chocolate has health benefits)
1-1/2 C. Splenda or Altern Sugar Substitute
1 C. Smart Balance Margarine Substitute
3/4 C. Egg Beaters (original)
1/4 C. Smart Balance Mayonnaise
2 C. Whole Wheat Flour
3/4 C. Cocoa Powder
3 T. Baking Powder
Pam or other oil spray
Preheat Oven to 380F
*Cream Sugar Substitute and Smart Balance
*Mix in Mayonnaise, stir till nearly smooth
*Add Eggbeaters; mix till smooth
*Put flour in sifter, add Cocoa and Baking Soda
*Sift into mixed ingredients (above) and mix
(Mixture should be moderately stiff.)
Spray cookie sheet lightly and evenly with Pam or other oil spray
Drop cookie dough, the size of a large egg, onto cookie sheet
(Dough will not spread much during baking, so cookies don’t have to be very far apart)
Bake 15 minutes, or until top of cookie feels firm when touched lightly.
Cookies will be VERY dark brown, and will have a cakey consistency.
Makes about 18 Cookies
Part of dough can be refrigerated and baked next day.
