Burritos are one of the best ways to make a meat-free meal. Only your taste and imagination limit the contents of your burrito,
Fresh spinach leaves: 2 cups chopped or 10 leaves unchopped Feta Cheese one small container or pound Diced canned beets (drained) Chopped garlic one clove
Lemon juice fresh, to taste. One small red (purple) onion sliced thin Sliced black olives one small can. Greek Salad dressing (optional) Place ingredients onto a 12-inch flour tortilla, roll up and eat!
CRUNCHY GARDEN BURRITO
1 Lettuce leaf (I like red, but you choose what you like) 1 chopped sweet bell pepper 9or hot if you prefer) 1 small sweet onion or purple (red) onion chopped 1 Fresh tomato with the seeds and goo’ removed and chopped 1 Pickling cucumber (the little ones) chopped 1 Stalk of celery chopped Pickles or sliced olives to taste Fresh Lemon juice (or salad dressing)
Place the lettuce leaf on the tortilla, sprinkle the above items on top and roll/fold enjoy! Makes 3-4 burritos
WALDORF-ISH SALAD BURRITO
Flour tortillas 1 good’ apple Fuji, Braeburn, Pink Lady or Granny Smith 1 cup chopped pecans cup chopped celery cup raisins 3 TBS Miracle Whip
Place all of the ingredients into a bowl (except the tortilla) and toss together. Fill your tortilla shell yum! This makes about 3-4 burritos
Flour Tortillas Pizza Sauce 1 cup shredded Mozzarella cheese 1 cup shredded Provolone cheese 1 small can sliced black olives (drained) 1 small jar of Galapagos (small ones or sliced) 1 package of soy or veggie pepperoni 1 small chopped sweet green pepper 1 small chopped sweet onion Parmesan freshly grated or in a canister Pizza seasoning
Place ingredients on the tortilla, roll/fold and bake for about 10 to 15 minutes in a 350 oven. You can just place the items on the flower tortilla and bake it like a pizza, but the tortillas tend to dry and curl and fall apart.
DECADENT DESERT BURRITOS
Flour Tortillas 1 package chocolate chips 1 package mini-marshmallows 1 package chopped pecans or almonds 1 package Kraft Caramels 1 package coconut (sweetened) 1 small jar drained Maraschino cherries 1 Small can drained pineapple (bits or chunks) 1 Can Redi Whip
Set the ingredients out in separate bowls and let folks make their own decadent dessert! You can also make some up with the chocolate, marshmallows and nuts, roll them up and bake them for about 10 minutes in a 350 oven and serve on a plate with ice cream or whipped cream and a cherry on top!
If you’re going camping, make some up and wrap them in foil. Place them near the edge (cooler part) of the campfire for a yummy treat. here
