Easy Vegetarian Casserole

1 TBS virgin Olive Oil
1 small Spanish Onion, chopped fine
2 large fresh Green Bell Peppers, stemmed and seeded
2 cloves fresh Garlic, diced fine
Dry Spice Mix:
1/2 tsp Basil
1/4 tsp Thyme
1/4 tsp dark Chili Powder
1 pinch crushed Red Pepper
1 TBS Malt Vinegar
1 16 oz can vegetarian Black Beans
1 16 oz can vegetarian Lentils
1 14 oz can Collard Greens
1 26 oz jar of your favorite meatless Spaghetti sauce
1/2 cup grated Romano Cheese
8 oz shredded Mozzarella Cheese

Preheat your oven to 350 degrees. Heat the olive oil in a large skillet over high heat for one minute. Add the onion, green pepper, garlic and spice mix. Shake skillet vigorously. Add the malt vinegar and stir well. Lower heat to medium and cook this down until onions have turned clear. Turn off heat and set the vegetables to cool for 10 minutes. In a large bowl, combine the black beans, lentils, collard greens, spaghetti sauce and grated romano cheese. Mix well. As soon as your vegetables in the skillet have cooled sufficiently, add them to the bowl as well. Mix well and place all of this in a large casserole dish. Bake the casserole for 20 minutes and then top the casserole with the shredded mozzarella cheese. Bake for an additional 15 to 20 minutes.
